Le thé à la menthe n’est pas originaire des traditions marocaines. Il puise ses racines dans la deuxième moitié du 19e siècle, lors de la guerre de Crimée en 1853, opposant l’empire russe à une coalition formée par l’Empire ottoman, l’Empire français et le Royaume-Uni. À cette époque, les Marocains consommaient principalement des infusions d’absinthe ou de menthe fraîche.

Le conflit ayant bloqué les livraisons de thés vers la Russie, les bateaux britanniques furent tenus de rester à quai au Maroc, dans les ports de Tanger et Mogador (aujourd’hui Essaouira). Pour ne pas perdre les marchandises, elles furent débarquées et le thé vint s’ajouter aux coutumes de consommation d’infusions locales. Ainsi, le thé oriental est né.

  • 1. Faire Chauffer l’Eau : Portez de l’eau à 80°C. Il est préférable d’utiliser de l’eau fraîche pour garantir une infusion pure et claire.
  • 2. Rincer les Feuilles de Thé : Rincez rapidement les feuilles de thé sous l’eau chaude pour éliminer tout excès de poussière et réveiller leurs arômes.

  • 6. Sucre (Optionnel) : Si vous préférez un thé à la menthe sucré, c’est le moment d’ajouter du sucre. Ajoutez selon votre goût, en remuant pour bien mélanger. Les Marocains ajoutent souvent jusqu’à 12 morceaux de sucre.
  • 7. Verser et Laisser Refroidir : Versez le thé sur les feuilles de menthe dans les tasses. Laissez le thé refroidir légèrement pour permettre aux arômes de la menthe de se libérer davantage.
  • 8. Présentation : Traditionnellement, le thé à la menthe est versé d’une hauteur dans de petits verres (les keesan) pour créer une belle mousse à la surface. Cela nécessite un peu de pratique.
